Why does the BESS round trip efficiency (74.79%) not match the inputs I set for the component (75%)? Energy Out/Energy In = 74.79%

The RTE accounts for the storage depletion as well.

BESS RTE = (Energy out + Storage depletion)/Energy in

Storage depletion is the difference in the state of charge of the battery at the beginning of the year (first timestep) and the end of the year (last timestep) in kWh. So if your battery started with 0 SoC at the start and at the end of the year it was at 200 kWh SoC, the storage depletion would be -200 kWh/year. The difference in the storage state of charge at the beginning and end of the year, in kWh/yr.
